A bacon double feature

Belly and Back (canadian) bacon.. Out of a week's worth of curing.

Into the Traeger on 'smoke' until we get back from Church. Then up to 180 (really 200) until they are done.

Got the elastic way too tight... Kinda went 'hukki' on me. ;D

They are covered up and resting in the microwave now.

I'll vacseal them and pop in the fridge for a couple days. Slice on Tuesday.

D@mn good stuff.

The 'Cajun' flavors didn't come through at all. I think the rinse knocked them all off. Perhaps next time after rinsing/drying, I'll apply some oil or other 'glue' and rub some Soileau's/whatever on before smoking.

Nice Squirt! Did the shagbark hickory flavor come through in the CB? I ordered some more so i can try it.

Yes, it did. Real nice flavor... Almost like a cross between Maple syrup and Blackstrap molasses. Thanks again for sending me a bottle of it!
