ok some onr told me to boil it and take the skin off them marinate ite it..... wow i cant believe how bigf it is gene simons has nothing over this darn thin. boiling it now in a creole deal ??????? then take the skin off???? thank gooodness i have a belly full of gin stand by...

Actually it is usually braised...In kentucky speak sear it and then put it in a pan with any liquid other than Gin that covers it half way...cup of coffee garlic onion salt pepper garlic 2 cups of broth Cover in a ductch oven and simmer for about 2 hours. About 250 temp on the smoker
