My process for making beer sticks. AKA Beer slim jims ;D
In the Pellet fired Bighouse :)

Your choice of beer. 1 cup. Stir it up some so it gets kinda flat.

Cure #1 dissolved in 1oz of distilled water. This method incorporates into the meat better and does not make the beer go funky

Seriously though... That lazy susan for catching the sausage is another great and ingenious idea.

Do you have a meat mixer for mixing larger batches of sausages?

Used to have a meat mixer but took it back after i found brass in the meat from the crank bushings shaving off.

Yikes! I'd been looking at some, but maybe I'm better off to keep mixing by hand. No brass bushings, just food-safe elbow grease!

I have 20 lbs. of summer sausage curing in the fridge right now to be put into some 1 1/2" casings for gifts. Mixing that much made me start thinking of a meat mixer.

Had a message asking why do i have such a large grate over the fire pot?

One pan is for extra wood if i need a large amount of smoke and one is for water.
