OK, it was actually choice but fantastic none the less!
Injected with garlic, rubbed with steak seasoning and MAK Mesquite rub.
Plastic wrapped in fridge for 2 days.
Seared 5 minutes per side on high.
Smoked at 250 for about 3 hours.
Best one I have smoked yet :)

Fantastic! Just showed this to my wife and that's what she wants me to smoke for New Years day dinner, (I'm not complaining). Let's see, two days in the fridge...I better get cracking!

Wow! Bob, I've been putting it off trying other new things but looking at this is too much to handle! I am gonna have to go get a rib roast and try one of these... THIS WEEKEND!
