MAK Reverse Seared Filets in the rain

People say you cant cook with a pellet grill in the rain. They also say you cant cook a steak. Here is how I cook a filet. Pre-heat the smoker to 250. For these I used on one side Big Poppa Smokers Cucko Racha very lightly as a base coat and a top coat of BPS Little Louies Seasoned Garlic Salt with Black Pepper. The other side just Little Louies. Let the seasoning settle and 'melt' into the meat...about 15 minutes

Put on the shelf of your MAK for twenty Minutes at the 250. At twenty minutes set aside (You can use your warming drawer.) Bump the heat to 450. Sear for 5 minutes a side then two minutes a side. I know it takes a long time but it is super worth it!

Outstanding BP -- just the way I like 'em!

To date, I have ONLY cooked in bad weather with my MAK. Never above freezing and flakes flying most of the time... :)
