Tri Tip and Shrimp - Double Secret, Money, and Desert Gold

Haven't been able to cook for awhile. Decided to try Tri-Tip and Shrimp to get back at it. First time ever to purchase Prime Tri Tip. Not sure why to purchase prime for a cheap cut of meat, but it sure looked good and ended up even better:

Seasoned with Balsamic glaze, BPS Double Secret, and BPS Money:

Put on the MAK on smoke setting:

Flipped at around 105°F:

Removed tri tip from grill and cranked up the temp to 450°F. Put tri tip back on the grill grates above the flame zone:

Then pulled and rested. Shrimp had already been prepared with EVOO and BPS Desert Gold:

The Prime Tri Tip was better than expected. Having it on smoke for an hour then raising temp added a bunch of flavor. Will do this again!

That looks sooooo good!!! Have never done shrimp w/ tri tip, but I likey :)

I did a 1st the other day...tossed a couple of tri's on my MAK. Ran it on smoke for roughly 5 hours til 130 IT. Removed from the MAK and put them on a screaming hot cast iron griddle for 2 mins/side. Insane crust, and super juicy and tender. Probably one of the best tri tip cooks I have ever done.

Looks fantastic NorCal! The balsamic glaze as glue is a trick I learned from BP. I combine whiskey infused balsamic glaze and Sriracha as glue. Looks delicious!
