Grilled Chicken Rellenos

I make these pretty often with smoked pork or smoked chicken.. this time I used a bit of grilled chicken.

First I blister, steam, peel and seed some anaheim peppers.

then I make the sauce...
saute 1 small minced onion and 1 clove of garlic in a bit of oil til tender..
add 2 cups of chicken broth
1 cup of tomato sauce
1 teaspoon salt
1/2 teaspoon oregano
and 1/2 teaspoon of pepper
Let it simmer for 10 minutes


make the filling, grilled chicken, minced onions and queso fresco..

dust with flour and dip in batter.... fry until golden...
batter...4 egg whites whipped combine 4 egg yolks beaten and 4 TBS of flour.

Jeanie, those look great! Love the Pacifico in the background, everytime I drink one it takes me back to the Mexican Riviera.

Pacifico...back in the day...Honeymoon 1975 Mazatlan...On the airplane home had enough change left over to split a pacifico.

I Know now what's for dinner Friday, those look awesome, I just wish I could catch a little whiff of that through my screen.... I think I'll sub the pacifico for negro modelo(wife's fav.)...

Thanks Drake! They are easier to make if you skip dipping the whole stuffed chili in batter... just dip the bottom of the pepper, place in the hot oil then spoon more batter over the top. They hold together better that way.
