Spatchcock Chicken Seared, smoked and braised with Lemon and Mushrooms

SOrt of a twisted chicken picata
Heat smoker to 400
Season the chicken I used Big Poppas Desert Gold
SLice the onion and quarter the mushrooms, add capers, chicken stock (2 cups) juice of one lemon, and thre pads of butter and season the who kit and kaboodle Once agian I used Big Poppas Desert gold

Sear the chicken for 5 monutes breast side down, roate the chicken keeping it breast side down and cook for another 5 minutes

reduce heat to 325 and cook until the internal at the breast hits 165

plate it on a bed of pilaf and spoon the lemon mushroom sauce over the chicken!

BP is very good at "teasing" everyone with something. In this case it is his seasonings. I can't help but wonder what else he has waiting in the wings to spring on us, seasonings or otherwise. Keep them happy and keep them guessing, right BP?

I wish it was teasing...you get these ideas and products and then you have to find the right company...then the sampling process...the tweaking the labels then they are ready and the FDA has put new requirements..on and on The good thing is once you are good to go it is for a long time
