it really depends on how much surface area you need to cook. I think grill grates are fine with pellet cookers I would see if covering haldf the grill will get you what you want when you cover the entire surface you are affecting the airflow

just some simple rack of lamb with Big Poppa Smokers Sweet Money and BBS Cuckoo Racha for some heat. Smoke until 130 on the top shelf. Raise heat to grill and put the lamb in the warming box until the grill hits high and sear away until the internal temp hits 140
