    Christmas 2014 rib roast

On the MAK @200F with BD Hickory.

IT was 120F - the plan was to put it in a 550F convection oven for 8 minutes, but the Mrs had the oven in use. So I used a torch of sorts (a electric fan-based charcoal starter) to put the crust on the outside

Looks great! What brand of pellet and flavor, if I may?

Looks great Randy. I love that corn pudding too!

Interesting use of the electric blower charcoal starter for the crust. Looks like it worked really well.

Looks delicious, quite the feast. Please tell us more about the crust technique Cliff refers to.

There's a new searing tool called the Searzall that you mount on the end of a propane torch that's supposed to work quite well for "crusting".
