Portabello Mushroom Pizzas - 3 ways
I love these Portobello pizzas. I tried 3 different ways. First, Thai Shrimp Mushroom Curry with the filling following this recipe:

I cut the mushrooms and shrimp much smaller and made the sauce thicker. Then I made a Mexican version of the portabello pizza. The sauce was Queso, with Mexican cheese mix, chopped chiles, Tomatos, and Mexican oregano. The last one was my normal Italian pesto sauce, mozzarella cheese, tomatos, garlic, and basil.
Brushed the Portabellos with EVOO and grilled for a little bit, then added the mixes:

If you haven't experimented with these you should! They are wonderful.

BP definitely remembers a variation of these. He is the one who shared these on Food Network in 2004:

I have done these before where Sterling mentioned to try variations. I am sure there are much more creative people than me. These are very good. For me, I like the Italian style best (with pesto, mozzarella, etc.), but the others are very good. I am sure there are other ideas out there. As BP says, the mushroom is your boat!!!!!!!
