    Smoked Spaghetti and Meatballs

One of our favorite things to do on the pellet smoker is meatballs, they come out great every time with a killer smoky flavor that really enhances your favorite sauce.

    Here we go-

Start with a 50/50 mix of ground veal and ground pork

Toss in some garlic, egg, salt and pepper, Italian Parsley, and grated Romano cheese

Add breadcrumbs and a little water and mix

Form it into meatballs and onto a frogmat for easy transfer to the grill

Onto the MAK at 275 for about an hour, turning halfway through

    Meatballs done

Into the pool to simmer for about an hour

Vac seal the rest for a quick meal later

    Dinner is served

If you haven't tried spaghetti and meatballs or just meatballs on your pellet cooker you need to. They come out great!

Looks great Carter! The family still laughs about the time I used the smoker to improve on frozen pre-cooked meatballs...(nobody complained about how they tasted!) Made from scratch has to be awesome!

1 pound ground veal (you can sub beef)
    1 pound ground pork
    2 cloves garlic, minced
    2 eggs
    1 cup grated Romano cheese
1 1/2 tablespoons chopped Italian flat leaf parsley
salt and ground black pepper to taste
1 cup breadcrumbs (I always use the seasoned ones)
    1/2 cup lukewarm water

Combine veal and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.

Blend bread crumbs into meat mixture.

Slowly add the water 1/4 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1/2 cup of water). Shape into meatballs. Place meatballs on smoker running at 275 for about an hour turning halfway through.
