    Stuffed Flank Steak on the 2 Star

    I love watching Malcolm Reed How to BBQ Right videos (as well as BPS videos) to help me get away from the standard ribs, pulled pork, brisket, tri tip syndrome. I decided to follow his stuffed flank steak video:

    First, I sauteed the veggies. I added onion, garlic, and red pepper to the mix:

    Butterflied the flank steak (not as easy as Malcolm makes it look!):

    All on the flank steak with a very, very light layer of cream cheese:

    Rolled and tied:

    Smoked for a while, then raised the temp. Here it is almost at 130-135F:

    Sliced and ready to plate:

    All plated up with veggies and rice:

    This was absolutely fantastic! Will do again for sure.

    Oh my that looks incredibly good! I'll be trying this one soon, maybe even with some shrimp added to it. Thanks for the link to the video & recipe.
