    Spatched Chicken & Infuser Stuffed Poblano Peppers

    Started with a whole chicken...



    Spatched and a heavy coating of Big Poppas Money Rub...





    Onto the Memphis set at 325F...



    Now for the peppers...



    Fire roasted on the top burner. This brings out another flavor profile and tenderizes the flesh...





    Now slice open along the vein and use your fingers to loosen the seeds then rinse them out...



    Imitation crab meat coated with Soileau's and Big Poppa's Desert Gold...

    Now chop it up...



    Now for a interior layer of shredded cheese...



    Then imitation crab meat...



    And another layer of cheese...



    Hummm. How to seal them shut? How about some bacon...



    And then coated the bacon with Big Poppa's Happy Ending Finish Rub...



    Into the Infuser with cherry pellets on the gas grill side burner...



    30 minutes later...

    After 30 minutes I bumped up the Memphis temp to 400F and gave the chicken a flip...



    20 more minutes and then I pulled it off the Memphis...



    Plated with Romaine salad and Bob's Blue Cheese Dressing...

    Those peppers were fantastic and the chicken moist & juicy. The rubs were great on the chicken!

    Chicken - Kickin' it old school.

    Start with 2 cut up fryers, dust liberally with head country


    On the MAK 2 star with BD Sugar maple @350F


    When the IT hit 160F, slathered with Stubbs Original


    Plated with a potato cake

    Tandoori chicken starter and chicken tikka masala with basmati rice plus Naan bread

    Ok so cook what we want? Ok this one of my favorite dishes and my wife doesn't care for it much... Good thing she is gone this weekend :-)

    First the players

    A big part of this dish are the spices... Clove, bay leaf, cardamom, cumin seed, coriander seed, cinnamon stick, pepper corns and fresh ginger, garlic, lemon, and last but not least chilies

    All of the spices ground and mixed with plain yogurt (and red food coloring for that cool look)

    Now on to the chicken tikka masala... Remember that whole breast? Here it is chopped up... Sorry no picks of the next few steps but the chicken goes into a "stew"of tomatoes with a bit of water and the same spice palette that went into the tandoori sauce. Cooked down on the stove for a few hours

    Now for the rice...it needs to be flavored up a bit with some clove, cardamom, cumin, cinnamon,salt

    Chops and wings

    Chops, one with money and another cherry rub


    Butternut squash and corn




    Something different to drink. Pretty good different


    Pretty darn good. Kids liked the cherry chops. The wife and kids took my corn, they loved the corn. Butternut was just ok.

    And earlier for lunch


    Loved the hot wings. Little garlic, franks, butter.
