Ahhhh Found a beautiful prime rib at costco...crazy good marbling. Preheated the make to 250 set a water pan to catch drippings with one cop of water in it. Hit it lightly with Big Poppa Smokers Cuckoo Racha as a base coat and the BPS Double Secret Steak Seasoning...Set it on the shelf and didn't check it for 3.5 hours and it was done to perfection.

Oh yeah, that's my kind of steak right there! And I have to agree with you, BP. Sous-Vide has become a popular way to cook Prime Rib (as well as other cuts), but I just don't think it has the same flavor as one smoke-roasted in my MAK.

Couldn't agree more! Cook it slow in a plastic bag or cook it slow in a pit with smoke, not even a question for me.
