I’d go with the MAK 3 star. I think it will do what you want but it is pricey. Yet, I don’t think you can beat the quality or the customer service with MAK. Great company & people!!

Usually a brine has salt & sugar & can have many other spices added to it. It’s mostly to keep food moist but they add flavor as well.

I usually just crank it up to Grill mode & burn it. Then I just use my Grill brush & it brushes right off. After smoking, it’s always kind of gooey in there.

I think it’s just trial & error for what you like. Some people like lumberjack, others BBQers delight, bear mountain & cooking pellets. I think those are the most consistent brands.
