Weekend Cook

Started out the weekend by cooking putting some onions on the Traeger for a little smoke

after about an hour put them in a pan with 1/2 stick butter, a few garlic cloves and some fresh thyme

Then into the house to cook down alot more

added some wine, cooked that down added some beef broth and simmered for awhile

into a bowl

added some baguette & cheese and a little time under the broiler

Made a couple turkey meatloafs

then started a little bacon to be smoked next weekend

one maple, one black pepper, one with shagbark hickory syrup

then started some of the chile verde that I did a couple weeks ago but I seem to have lost a few pics :(

roasted peppers
I roasted some tomatillos, garlic, peppers (poblano, serrano, jalapeno) then after taking the skins off the peppers all into the food processor with some cilantro & white beans

got up this morning and it was cold, I have never seen the Traeger controller at zero before

put four chuck roasts on

after about 5 hours I pulled and foiled (and threw them in the house oven)

some red wine, beef broth, onions & garlic on the bottem, added some carrots, potatoes & onions on top

after the beef came off a few chicken breasts for the freezer

Oh yeah... Comfort food. I love homemade onion soup!

He he... either you and FLBentRider are both just teasing me, or there's a Chuck Roast bug in the air. I picked up two chucks to smoke but was so busy this weekend I never got the chance to even fire up the grill, so they had to go into the freezer to wait for another day.

It all looks very tasty.
