12 Hour Brisket.

Last night, I tried a slightly different recipe, smoking it for 6 hours, then finishing the rest of the way at around 220 degrees, low and slow. Came out perfect. I'm really getting the hang of brisket, I believe, just need to keep working on ribs.

Looks good! What IT did you cook to? Did you foil or FTC? Outstanding smoke ring you have there. What kind of grill did you do this on?

I put it on at 2am, just on the Traeger Lil Tex Elite grill, and then at 4:30am, put it in a foil pan for the rest of the time, till it got to 210. I kept the temp around 220-230 the whole time, so it really was low and slow.
