Did a couple Pork Butts & baby backs this weekend.

I used Big Poppas baby backs video as a reference for making these and they came out ridiculously awesome! My first set of ribs on the smoker. I didn't even need to sauce them up because the honey/margarine/brown sugar made such a sticky, sweet glaze and the rub had a nice smokey, spicy contrast, they were good on their own.

I did 2 smaller butts this time hoping to get more bark and less cook time (not using the crutch). They came out pretty good, just not quite as moist as I would have liked. I think the temp in the smoker got a little high when I was out, as well... but.. It's pork... forgiving and delicious.....

That's fine; you redeemed yourself quite well. The pics are great. ;)

I like to use that trick of using smaller butts or cutting them in half to get more surface area, bark & smoke. It works well BUT...

PLEASE don't call foiling a crutch... it's one of my favorite techniques (and it hurt my feelings)! :p
