This year I was nominated to take care of the turkey and they all wanted it smoked. About half of the family wanted Cajun and the rest wanted regular, so this year it's the tale of two turkeys...well turkey breasts that is!

Thanksgiving Turkey Breasts

Bird #1 – Cajun Injected and Rubbed
7lb turkey breast, ½ cup butter, 8oz beer, personal blend of Cajun spices
Peeled back the skin then rubbed with ¼ cup softened butter. Rubbed with spices, then replaced the skin and rubbed on more spices. Combined the beer (room temp), ¼ cup melted butter, and about a tablespoon or two of the rub spices. Used that mixture to inject into the turkey breast.

Bird #2 – Sweet & Smoky Rubbed
7lb turkey breast, EVOO, personal blend of smoking spices
Peeled back the skin then rubbed with ¼ cup softened butter. Rubbed with spices, then replaced the skin and rubbed on more spices.

Cooked both with a combo of Hickory & Apple pellets. Smoke for 2 hours and then bumped to 325 until IT was 170.

They’re resting now, but of course I’ve had a little nibble of both… and they’re awesome! Now it’ll be hard to wait until tomorrow to actually eat them. :D
