Big Poppa Breaks out his Hasty Bake....(with pellets)

Ok this is sort of for Spark and those who seem pretty interested in the Hasty Bake. Hasty Bake was the first commercially available 'charcoal oven" Grant Hastings designed it....way back in 1948...they still use the basic design to raise and lower the fire box...I believe that the perfect one two punch is a pellet smoker and a Hasty Bake.

So Spark here is how I light mine.....there is a charcoal basket and a slide out solid tray....I create a gap and put bunched up newspapers and use the shelves as a chimney.

Started with some Strube Ranch Tri Tip seasoned with coffee balsamic glaze and Money rub...put on the very top shelf away from the fire...I am not using the deflector plate for this cook....cook until it hits 110 and then flip over......at about 115 I put the prime new yorks on seasoned with the garlic olive oil that I sell and double secret steak rub...

After about seven minutes turn the steaks over for about 5...then pull and rest...the tri tip was at 135.....Crank up the hasty Bakes fire box and go to town for about a minute or two a side.

Then put the steaks on about 90 seconds a side....

And the plated dinner....Cauliflower with Jallelujah with bacon rub and string beans....Nice Balamic salad....

This is why I keep my charcoal stick burners around. Yeah, I love my MAK too, but there's just something about cooking with wood or charcoal that satisfies that deep inner primal urge.

Ugh... Fire hot, Fire good.

Those are some fine looking pieces of meat! That plate wouldn't last long around my house. I like it.

Pretty darn close...Im sorry I dont have an exact measurement but it depends on your coal load...I have never not been able to get it where I didnt want it...

Scooter like BP said it does depend on the coal load, but if you pull out the grease drain bar you can get the coals a little less than 2 inches off the grates.

Tom, could do me a favor, please raise the coal tray all the way up and drop a tape measure down through the bottom grate and tell me what it reads when it hits the coal tray?

wanna know what it reads when a tape measure is dropped through the bottom cooking grate and hits what the charcoal itself sits on. Don't know what it's called on a HB, coal grate? If the coal grate sits in a coal pan, I just need the distance from the coal grate to the bottom of the cooking grate when the coal pan is set to the highest setting.
