I was smoking some cheese yesterday with my AMZNPS cold smoker using apple pellets.
Getting really bored, looked in garage fridge and had a container of dill pickles. Hmmm said self.
How bouts some cold smoked pickles...EH

BBB is short for Buck Board Bacon.
BBB has been in the cured brine for 2.5 weeks. Took out and rinsed off good.
Now a soak in cold water for 2 hours. This helps reduce the surface salt some.

Getting real low on pellets. Anyone know of places in or around the Savannah, GA area? Found a couple places but either to early in the season or they stopped carrying them.

Got 5 lbs of 90/10 GB going to mix up for 5 lbs of Amish style sweet lebanon bologna.
Here is my mix.
Mixed 1/4 tsp of the f-rm-52 with 1/4 cup distilled water and set aside.
1 1/4 cup dark brown sugar. Small bowl is the rest of the dry.
Mixed the dry with 1/4 cup distilled water.

I did some pepperoni in my Bradley smoker and used pellets in the AMZNPS.
Did the smoke and now in my dry cure fridge. The pepperoni is at day 3 of 7-10.

We are getting settled in GA now. Just about ready to get my MAK dusted off and back smokin.
My wifes boss asked her if my grills and smokers were mobile :D
Guess i need a trailer now.
Well getting the truck tomorrow to pack up and head south. We got a nice new house located in Port Wentworth, GA about 10 miles from Savannah. We have to come back north for another week for my wife to finish her last days in Allentown Tracon LVIA.
