Basic Cookware and Utensil Recommendations?

My 4 Star General should be arriving soon and, although I won't have it installed for a few weeks, I thought I would start getting the arsenal ready. I'm going to need some cast iron as well as some basic Grilling/Smoking utensils. Any specific recommendations would be appreciated. I was thinking of a couple of Lodge cast iron skillets, a couple of cornbread pans (any preference here?) and a dutch oven to start. Are there better brands than Lodge?

I have Lodge cast-iron skillets. We love them. We do steaks, frittatas, chickens...all kinds of stuff with them. We have several sizes. Plus, they don't cost an arm and a leg. They're great!

We got one big Dutch Oven Le Creuset as a wedding present. Haven't used it yet, but we look forward to using it and to adding more Le Creuset pieces in the future.

We also got a great bamboo salad bowl, which seems to be a fantastic thing to use in making Caesar salads.

How about a Thermapen--if you haven't got one already. We love ours.

I have a thermapen - I picked it up when I got my Modernist Cuisine books as it was highly recommended.

I have some Le Creuset pieces, will they discolor in the MAK?

You could put foil around the outside of your Le Creuset pieces to keep the smoke off of them. Just don't wrap the foil down inside the pan too far or the liquid will suck up under the foil and create a mess.

Some silicone basting brushes are nice. Medium length tongs that feel good in your hands. Spray bottle for spritzing. Brisket slicer, boning knife, big roll of foil, disposable aluminum pans (1/2 and full size), sheet pans, cutting boards, injector, spice grinder, ove gloves, cotton gloves, nitrile gloves, Cambro Camcarrier.

When it comes to cast iron brand really doesn't matter much. Cast iron is tough and, with proper care, will last a lifetime. You can use it in your grill with no problems.

Lodge is the standard for cast iron and they offer a lot of different pans/pots/griddles/etc. at usually good prices. Some hardware stores offer lodge stuff that you won't see at Wally-Mart. Almost all of our cookware is cast iron and we love it.

Keep an eye out at garage sales for cast iron made by companies such as Griswold. You'd be surprised how cheap you can pick them up sometimes.
