Good buddy of mine is headed out for a 30 day cross country trip...wanted to make him and his wife some beef jerky for the trip. Any clue on the shelf life of jerky?

It depends on a lot of factors.
How much moisture that remains in the product is probably the biggest one, adding potassium sorbate after it is done will extend the shelf life.
