Brined Pork Loin with Stuffing and Horseradish Cheese.

We are testing a new pork brine product for a friend so this was the perfect cook for it. Filleted it out and put it in the brine and into the fridge for a few hours to work some magic.








Prepared the stuffing and let cool before adding it on to the pork. Added the stuffing and some sliced horseradish cheese on top. Rolled it back up and tied it closed. Onto the Yoder for some smoking love!!














Done and ready to pull off the Yoder.








And lastly the money shot of the inside!! The taste was amazing and we will be doing more of this cook for sure - that horseradish cheese was an excellent find for this!! Enjoy.

Love the rolled pork with stuffing and the horseradish cheese! Nice combination of flavors. Can't wait for my shoulder to be declared able to fully use my grill again. I am developing a back log of cooking ideas.

If you come across that horseradish cheese try it... it is really good. I am thinking I need to pick up some more for the next cheese smoking project!

I have eaten horseradish cheddar over the years. You can't always find it around here in NC. I used to buy it when we visited relatives in Elizabethtown, PA. The local butcher shop always had some. I found some a while back in a cheese shop in a town called West Jefferson, NC. I bought some and smoked it. Still waiting to try it smoked. Should be ready any time now. Until you posted about the cheese, I kind of forgot that I had some waiting in the wings.
