Chicken, Sausage, Peppers & Onions on spaghetti squash

Back to the healthier eating...

Spaghetti squash split in 1/2 , a little garlic olive oil, salt & pepper - onto a baking sheet, roasted til soft

skinned some chicken legs, cut up some garlic, peppers & onions (onions & garlic not pictured)

all onto the MAK (the squash went on first)

after the chicken got some smoke and color it went in with the peppers & onion with a can of hand crushed tomatoes and some grilled all back into the MAK, a little later some chicken sausage was added.

Wow, I haven't eaten yet today so you can imagine what looking at this is doing to my hunger!

Did you rice the squash after you took it off the grill?

No, the spaghetti squash has flesh that is strands. You just take a fork and scrape it out to separate the strands. It's good stuff, sometimes I will toss it with a little olive oil and parm cheese for a side.

That right there looks way too delicious to also be healthy!
I had never heard of spaghetti squash till just the other day I saw it being made on a tv show, guess I need to give it a try....
