Chicken Mole over Arroz Rojo

OK, it simply means chicken with sauce over red rice. Mole (pronounced moe-lay) means "sauce" and is a generic term used for a number of sauces in Mexican cuisine as well as dishes based on these sauces.
The classic mole version is the variety called mole poblano, which is a dark red or brown sauce served over meat. There are probably as many recipes for the classic mole as there are hispanic mothers who cook it. My version came from the hispanic mother of a close friend who swore me to secrecy before secretly slipping me her mothers mole recipe in a back street alley under the cover of darkness. ;)
It's a thick, hearty, dark brown sauce that fills the mouth with rich chile flavors and is very well suited to chicken!

Any chicken mole starts here, with the guest of honor! I seasoned this chicken with garlic EVOO, jalapeno seasoned salt and Desert Gold.

Onto the drum with a chunk of apple and a handful of BBQrs Delight hickory pellets
IMG_0438_zps22aa8d8b.jpg

Time to get the sauce going. Here are most of the players. The onion and garlic are only to flavor the oil used to make the roux. There are 3 main chile powders used. The pic only shows three bags. There are many more like it just off camera. And yes, this sauce has a chocolate element to it like many classic moles.

Here's the sauce all put together now we'll simmer it for about an hour.
IMG_0442_zps852b7faa.jpg

The Arroz Rojo (Mexican red rice) gets started, we used brown rice instead of white. This is a simple but tasty recipe which has onion, garlic, chicken broth, tomato paste, serrano chile and fresh cilantro. 30 minutes till go time!

Chicken's done! Beautiful color and crispy skin off the drum.
IMG_0447_zpsdb5db3dd.jpg

Plating: I laid down a bed of the Arroz Rojo and placed a leg quarter on top. Then poured the sauce over the chicken and garnished with roasted sesame seeds. Pretty traditional presentation and very simple. With it are some homemade refried black beans and a salad.

This week I asked for help with chicken souvlaki. Here is my version as it is.

I started out by cubing my chicken (not shown) and getting it into a marinade. I wanted to get something like tzatziki flavour into the chicken. Here are the ingredients with the exception of the oregano.
1fdbf74d-d7a6-4dbd-b86f-190c8cfe0223_zpsdebd5462.jpg

Mixed it up and threw it in a ziplock for a long rest in the fridge. Not an easy thing to take a nice pic of.
38af7e2d-8f41-4aff-b944-7abaa5b07d92_zpsdff54f5f.jpg

Next I got my tzatziki ready. Here are the fixins for that one.

Just to make this one my own I wanted to try some home made pita. Got a recipe and my ingredients.
2b7ce168-ac97-4920-8c1c-a50902bd6dfd_zpse2b9d681.jpg

While my pita dough was rising I rinsed off and dried my chicken and got it on skewers. I dusted them with a bit of LLwP, dry mustard and onion powder.
5029dc87-d52a-460d-982c-11a4b195c27d_zps0831f5e5.jpg

I let that sit for a few minutes while I started the Traeger and rolled out my pitas.
0d7f3606-7113-4e28-a40a-75ddef5f77fd_zpsc76e70f9.jpg

I had intended to make my pitas on the traeger, but a nasty wind seemed determined to steal my heat so I only did my chicken and a few tomatoes on the grill.
f734178d-e8ad-48c4-b061-b180f9a15cac_zpse8d689c3.jpg

As a result I made the pitas in a 450 oven in a cast iron pan.

I like how they look.

Chicken is in after 15 min at 325.

Made a sandwich with lots of tzatziki, some lettuce, tomato and lots of my chicken on a warm pita.

Add some Greek salad the wife made and it is a great dinner.

179f5c95-a53c-4230-96b1-c138e69c11f8_zps555973f0.jpg

In all it was pretty good. The chicken was where I wanted it to be for tenderness and moisture, the pita was great, but overall there was a bit too much lemon for my liking.
thanks for looking guys.

Super juicy chicken!

Money with Happy Ending was a hit. All 7 plates were devoured, and a few of the kids went back for seconds.

Didn't weigh the pellets to see how many we used, but we definitely used A LOT in such a short cook. Must have been those 35mph sustained winds with the 45+ gusts :)

A taste of Cuba

Started this off with some thick sliced pork loin marinated for 8 hours in a Cuban style sauce. I didn't get a picture of the package unfortunately.

syhune5u.jpg

Next up I dry roasted some brown rice in the Dutch oven. First time I've done this..really didn't notice any difference.
yguru3eb.jpg

I got the rice cooking and then got some onion and tomatoes cut and got some chopped garlic, cumin, black beans and chili powder together.

apa6u9a7.jpg

y4ytejeh.jpg

I set the MAK to high with the grill grates in and pre heated it for 25 minutes. Time to cook some meat!
uzejezy7.jpg

In the mean time I sautéed the onions in olive oil then added the tomatoes and spices. Yeah that's a pile of garlic!

Time for a lil flippage..

Oh yeah! Gotta good char going!

7use6e5e.jpg

Added some beans to the tomato, onion, garlic mix.

Nice! Chops are done!
udydeda7.jpg

Put a bit of rice on the plate with the tomato, onion, black bean and garlic on top.
jeqenaqa.jpg

Add a thick sliced cuban style marinated charred pork loin cooked with oak pellets to the plate, fix ya up a mojito and you have a "taste of Cuba" !

It turned out really good! It has me wanting to make a sauce from scratch now. I'll be looking into Cuban flavors now for sure.

Thanks for looking!

Thanks for the pics, 7sanders! I think it's great that you're teaching your kids that the food we eat and see in the grocery store comes from somewhere.

Great looking meal!
