Finally found a whole packer brisket at Costco a few weeks ago and it was USDA Prime for a very good price. After reading several posts by BP, Malcolm Reed, and others, I decided not to trim comp style, but leave most of the fat and just put it on. I did not inject, and only rubbed with Cash Cow and a touch of Montreal Steak Seasoning. Came out really good. By far the best I have cooked. Not perfect yet, but still really good.
Rubbed with Cash Cow and Montreal Steak Seasoning. On smoke for 2 hrs then to 250°F until the color looked right (used water pan for the first time):

Best to date by far. Hope Costco keeps carrying these in my area. Never seen them before, but starting to like it!
