Double fatties!

I smoked 2 fatties as appetizers for a party this weekend, they got demolished!

Bacon lattice stuffed with hot venison sausage (one of my deer this season), cheddar cheese in one and cream cheese in the other. Sauce this time was "shed" southwest sweet. Rubs were Dillo Dust on the inside and BPS Money on the outside.

Smoked on my SS Memphis Pro at 250 with hickory until internal was 190.

I agree on all three counts!

One question: Does the I.T. of the venison sausage need to be taken to 190° for any particular reason?

Not really. It's a good idea if the venison is blended with pork, but I only go that high because I know the bacon around it will be cooked and starting to crisp up.

Venison is typically prepared rare/med-rare. 190 for a venison steak or roast would destroy it.

Ahh, OK that makes sense! It's bacon thing not a venison thing. I thought maybe there was something about ground venison I was unaware of. Thanks!

They look super good on the outside.

That meat probe looks very high end and commercial grade!
