Notice that in alot of photos folks are using what looks to be wire mesh over their grill grates. Is that correct? Would that work best for fish, sausage, smaller stuff. What about Frog Mats?

I'm kinda thinking that I want something that will be strong enough to place over a drip pan. To catch the drippings and give a moist smoke, add a element of humidity especially during long smokes. Mopping, spraying I don't want to alter the flavor, my briskets are cooking up too barky on the lean side. Granted I am hitting my briskets wrapped in foil at 325 for two hours. I know this is the problem. Now that I have my MAK with all the control features i'll be able to do longer smokes, without all the hassle.
I also use mine all the time for almost everything. I do have some cheapo metal grates that I use for higher temps when I do not want stuff to fall through. They are more rigid and can hold on anything.
You will not be sorry when you get them, which reminds me I need to order another one!
