General Pellet Grill Question

Good Morning,

Dabid here (used to travel to Mexico where David became Dabid) - I'm VERY close to buying a Memphis Pro, been reading all about pellet grills. My "dumb" question for the day is "are they all what they claim to be"? Obviously its a HUGE investment and I hope like hell they're as great as everyone claims!!! We eat a lot of fish and chicken - do I cook fish slow to impart smoke, or do I cook fish at 375? Thanks for any feedback on cooking fish……..

I have the memphis advantage and I can honestly say that the investment has paid off. The chicken that I cook on it is excellent. I usually smoke it at a lower temp 275 for the first part of the cook to get more smoke and then I kick the temp up towards the end to crisp the skin. I haven't done much fish usually just swordfish steaks and tuna steaks and when I cook them at high temps they turn out great with a perfect sear.

BigPoppa sells GrillGrates which i think are an absolute must have. I know BigPoppa sells the Memphis Pro Pack which includes the GrillGrate specifically cut for the memphis which may be the better option. They really cook fish well and I love how burgers turn out on them. If you are smoking fish at a lower temp you want to invest in BigPoppa Mats. They are non-stick and make cooking fish at lower temps very easy. Just put the fish on the mat smoke it and then when its done then will come right off with no problems.

I love my Memphis and if I could have justified spending the money I would have definitely went with the Pro. Lots of cooking space and the open flame insert is nice. My Advantage model doesn't have the open flame insert and it works perfectly fine but I do plan on upgrading before the end of the summer. Another cool feature is that the hopper in the pro is divided into two bins which lets you mix pellets to get different flavors.

I don't think you can go wrong with a Memphis. I'm still newbie when it comes to smoking and the Memphis has made everything really easy.
