Well since I’m not cooking this week I wanted to share a recipe I have cooked for 40 years. This is one from my grandmother. Every time I cook it I remember her teaching it to me when I was 16 or 17 years old. It is homemade noodles and chicken soup on mash potatoes. It is much to complicated to show here so I will just show the results. Here we go.
Make homemade egg noodles. Just eggs, flour, salt and water. Roll cut and hang to dry.
Boil a chicken in some chicken stock till tender.
Shred chicken and set aside
Sauté some carrots, celery and onions till soft.
Bring the chicken stock to a boil. Add the noodles, carrots, celery and onions.
Cook for about 10 minutes. Add the Chicken and hold on low.
Make some Very Creamy mashed potatoes with heavy cream, butter, chicken stock and salt and pepper.
A little mashed in the bowl and add the soup. This is when the magic happens. The potatoes just melt when the soup hits them. I can’t tell you how good it is. Only grandma can.
