How to take the temperature?

I'm really new to the smoker so will probably get flamed for such a dumb question but anyway! When you are cooking something that is wrapped and you need to check temperature can you just poke thermometer thru the wrap or should you open it up? If you take temp several times and poke thru the foil I guess you could start to lose the effect of the wrap?

I also note that the preferred thermometers appear to be the instant read kind. Does anybody use the wireless type and leave probe in and monitor remotely from the comfy of the chair?!? Or is that totally against the smoking code? Many thanks,

You can poke through if you don't want to unwrap. Try to use the same hole each time but not a huge deal. You can always use a small piece of that metal tape they use in HVAC to patch a hole in your foil if it bothers you.
You will NEVER get flamed here for asking a question unless you've asked the same one repeatedly and even then I doubt you'd get "flamed"! :)

That is exactly what I do with rib roasts, hams etc. or something where I want to monitor the temp while it's resting.

For the record, we would never burn you at the stake for asking any question. We might ask you to burn us a steak though! :D
