Okay I've done two apple crisps this week. Now I'm going to have to try that asparagus. Yuuuum!

Reverse sear?

Great stuff, looks like you did the Godfather proud with those steaks. Can't wait to see the pics from the weekend!

Start the steaks on smoke to get a little flavor then crank the mak to about 450 and on to the grill grates for the sear.

I smoke them at 250 till the internal is 122-125 and then sear three minutes a side on high on the one star. I Didnt give it the total time but as long as a mak is 400 with grill grates your are good to go.

citrus balsamic......get some various citrus olive oils,,,,drizzle squeeze the juice of a lemon and then hit with desert gold and a further drizzling of a reduced balsamic glaze
