Oh BP what have you done. As i had said in an earlier post I did not intend to cook this weekend. Told the wife I needed a break and to make some dinner reservations for this weekend. And now you come out with the best contest of the year. Now I cannot let my peeps down and they miss the magic 30. So I'll need you to call my wife and let her know we will not be going out to dinner saturday night. Oh and sundays looking shaky. Knowing your level of customer service I know I can count on you to get this done. Thx

Here is my entry for the weekend, it is pretty weak, but I am going away tomorrow and this is my first entry. Ribs with some grilled veggies. At least I can help get the overall entry number's up. I may be able to get another entry in on sunday if I make it back.

Done, I made a bone head move and set my instant read thermometer at celsious rather than fahrenheit, so i over cooked them a bit, but they still turned out good.

The final plate. We had friends over at the last minute, so I didn't get to spend the time i would have hoped to on the ribs or presentation. oh well I am new to this. Ribs were good though. No foiling. tender with a bit of chew. The whole temperature thing with the thermometer screwed me up. I will never do that again at least.

Holy molly the Mak died on me. Keeps kicking the breaker. Tried my lawn blower on the same outlet worked fine. No idea what’s wrong. Guess I will have to rely on the standby.

Gotta use some pellets so let’s make a pak.

Labor Day weekend menu

Allright, we don't celebrate Labor Day in Germany, at least not this weekend. But I invited some guests yesterday evening and cooked a little menu:

We started with quesadillas.

Inspiration can come from interesting places...

We've been season ticket holders for the local NFL franchise for 18 years.

Walking in the stadium to our seats there are food vendors with various items, some appetizing, others not so much.

It occurred to me to use of these as a starting point for today's cook.

Start with some white masarepas flour, warm water and shredded pepper jack cheese.

Combine and let stand, covered, while the MAK heats up, set to 400F with BD Mesquite

Form into patties

Melt a little butter. A whole stick.

about 8-10 minutes per side - this is after the turn:

Add some pulled pork and a little Starne's sauce (from Paducah, KY)

The outside is crunchy, the inside a little soft, combined with the cheese, pulled pork and the heat of the sauce - it was a definite hit here.

Just Chicken

Spatchcock chicken has become one of my go-to grill items. I put the chicken in an everything-but-the-kitchen-sink-marinade. Soy sauce, coarse ground mustard, juice of 2 oranges, garlic, smoked paprika and lots of fresh ground black pepper. Then placed it into a plastic bag to get happy over night.

I put it on the Weber with a pot-o-peach pellets.

Ooops! Removing it from the grill was not executed with the professional flair I was aiming for but I know it’s not going to impact the flavor.

It was delicious! The chicken was moist, tender and full of flavor and the hot honey is the bomb. Don’t laugh if you haven’t tried it.

Chicken, veggies & pasta

Carrots, eggplant, red pepper, green pepper & some zucchini

onto the MAK, both the veggies and the skinless chicken drums sprinkled with herbs, a little drizzle of olive oil on the veggies

on smoke for a bit, up to 350 for until the veggies were softened some, chicken went into the pan and 35 oz can of cento italian tomatoes (hand crushed) on top, reduced the heat to 300
almost done, went a little longer - til the chicken was almost falling off the bone and the sauce reduced a little bit more

served with pasta , parmesan sprinkled on the top and a slice of roasted garlic bread

Double Cut Loin Lamb Chops with Couscous Salad and Fried Green Beans

Let’s get the beans breaded and into the fridge to firm up

Into the buttermilk and sirachhi and then double dip in the flour. Into the fridge.

Sauté the bell pepper and shallots and add to cooked couscous. Chill
