Looking to smoke a whole chicken4-5 lbs and 1-2 racks of Baby back ribs tomorrow for the in laws. Looking to complete both ribs and chicken about same time.. anyone have a recipe for me to follow? I am new to pellet smoking I have done a whole chicken before but never ribs.. I normally do a rib rub with some extra brown sugar. and a final sear with some sauce.. but I am willing to try a change..

When I do ribs, I use a variety of rubs, but the one I keep going back to is the "who loves ya baby back" recipe from Alton Brown.

I cut back on the salt by 50%.

I put the rub on them, run them at 225F for 2-3 hours, then foil with more rub ( a couple of tablespoons), 3 pats of butter per rack, a drizzle of honey, and a glug of white wine. After 2 hours in the foil, pour off the liquid in the foil, discard the fat and boil reduce by 50%. You now have sauce to go with the ribs that are done. Run the longer times if you like them "fall off the bone"

For the chicken, they take about 3 hours(ish) so plan accordingly.

I would have the ribs "over" the chicken if I was cooking them together.

Here is the rub
2 whole slabs pork baby back ribs

Dry Rub:

8 tablespoons light brown sugar, tightly packed
3 tablespoons kosher salt
1 tablespoon chili powder
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon jalapeno seasoning
1/2 teaspoon Old Bay Seasoning
1/2 teaspoon rubbed thyme
1/2 teaspoon onion powder
