Am loving this smoker it's turning out great food while so fun. This weekend I smoked a 10lb pork shoulder at 225f, a temp I stayed away from in the past with my wsm18. The pork went on at 10pm, was ready at 3pm and held on the smoker until 7pm, and all this was automatic. Simply amazing.

The heat is beautifully even. I purposely laid the bread past the drip pan on the edges. It's hottest on the left at the front and back which makes sense since the drip pan is angled that direction.

Now that's a great alternative to the "biscuit test!" It really shows how well the heat is distributed.
