Mak #160 how did I live without you

Finally put a slab of ribs on the Mak for the first time. Figured I did enough research and just needed to jump in. Thanks to all you for all the wonderful information on this site. Turn on the Mak to smoke. Mostly because I forgot to set it to 275 (trying to get two kids off to swimming class) so I let the ribs smoke for 30 minutes while I was getting the sides ready for the wife to put on later.

Figured I better toss on some more than just the ribs. Sorry (Turkey bacon for the wife), Mushrooms, Jalapeno Peppers, and red bell peppers.

Then up to 275 for the rest of the cook.

While I was at swimming with the kids had the wife give it a little foil love after 2 hrs being kissed by the smoke. So sorry no pictures. Got home after 1hr of foil and onto the grates with some bbq sauce until the toothpick went through ok. No clue what it really should feel like but I have my first data point. Pulled about 30 minutes later.

Cut some up some for the kids and was working on my plate... More please. The 18 month old already finished about 2 bones worth of meat. So cut up 2 more for him. Finally sit down and my daughter comes over and starts eating my ribs. About then they boy finished his 2nd helping and was taking turns gnawing on my ribs. I think I only got 4 ribs. Not to toot my own horn but they turned out great. No complaints but I owe it all to you guys and gals. thanks, Thanks, THANKS.

Did a whole chicken tonight with some scalloped potatos. chick was a hit and the wife says the smoker was the best thing ever. potatos were ok. Guess they all can't be a hit. Heading over to BP's right now to purchase more goodies. Having friend over next week.
