You can do it either way just depends on what your cooking. When cooking fish on the mat I have the FZ covered, when grilling veggies I have it open.

Mak Daddy: The mat on Big Poppa's site is recommended only for indirect cooking as contact with the flame will melt the mat; Does having the FZ uncovered count as direct cooking in this scenario even though the fire/flame cannot touch the mat unlike with a Gas Grill?

I've never used the Mats so don't want to burn it or ruin my dinner.

I assume they are talking about direct flame like from a gas grill. The MAK FZ pan open while using the mat is fine (I do it all the time).
Now if you have a grease flare up from a fatty rib eye you put on the mat (for some strange reason) then yes the fire directly on the mat would burn it. I bought a few and cut them up in various sizes so its easier to handle and I can cook multiple things at once individually on each mat. My fish one is like 5" square good for one fillet, the shrimp one is larger etc.
