What Sparky said...325 if nothing else is cooking, 275 or more depending on what's cooking on the other side.

Hey, thanks. Going to give it a whirl in the morning. I ended up doing some grilled cheese and ham sandwiches later today. My wife was about to do them on the stove for the kids, but I stopped her so I could play around with the griddle. Started at 220, but it was too low, so I cranked it up to 275 and it was just right. Kids loved them. So yeah, I think that I will set it at 325 to do the eggs, etc... any excuse to cook on the Mak! Thanks.

This may sound stupid, but does one cook things of this sort with the lid open or closed. If closed, how does one monitor the doness, especially something quick such as eggs?

I use the griddle with both the lid open and closed depending on what I am cooking. I will put a pound of bacon on, close the lid for a few minutes, come back, flip the bacon, close the lid and boom it is done. Eggs or stir fries I will do with the lid open.

One of our favorite things to do on the MAK is fajitas. I will grill the meat on 1 side and use the griddle to cook onions and peppers on the other side of the 2 star. Usually have the lid down during most of the cook, but it always goes pretty quickly.
