MAK is in and seasoned

So I was finally able to get to my MAK 1 Star last night and get it seasoned as it states in the book (on high for 30 min). Tomorrow we are having about 15-20 people over for a birthday party. Obviously I want to use my MAK so I was only able to find an 8lb Brisket. We will also have 2 beer butt chickens and Jalepeno Poppers and smoked Cowboy Beans.

I have never cooked a Brisket and have been reading up on it a lot, but there are so many ways its insane. My plan now is to drain the brisket put the rub on tonight (Brown Sugar Rub) glad wrap it then put it on about 7AM to be ready about the 4-4:30 mark if possible. I will put the beans on with the brisket around noon. I am not sure if I will have room for the poppers so may have to grill them along with the chickens. Since i don't have an upper shelf yet.

Question to you is for the brisket should I put mop on the brisket every hr? Then say after about 5 hours wrap it in foil tightly for the remainder of time? Or not worry about the foil at all?

i've never used a mop before. i'm lazy. i don't want to open up my lid ever 45 minutes or so. to much work. i just wrap when i want to.

So first thing is first, while starting up the MAK and getting it to temperature i accidently put the timer on for 5 min instead of 5 minutes. I went inside to work on some other things when i look out my window and see my neighbor trying to jump my fence. I run out and the thing is beeping pretty loud plus all the smoke = shed on fire or so they thought. I got them calmed down and then 5 minutes later I get a knock on my door from a full team of fire crew engine and all out front. I apologized and told them it was my new smoker and that they should come back around 1700 for some brisket.

Now for the party:
It was a hit and the brisket was juicy and tender! Actually everything was a hit. I cooked the brisket fat side down for 9hr 20 min at 225 degrees (no foil until removed, no mop). The beans for 4 hours. I cooked the chickens on the grill along with the Jalapeno chicken stuffed peppers.

Everything was phenomenal and I couldn't be happier with the MAK 1 Star.

Now that is what I call good quick thinking. ;)
