Hey Guys,

I just purchased a GMG Daniel Boone and smoked by first brisket today. I set the temp at 225 but after about 4 hours the meat temp was already at 180. This seemed odd to be so I placed another thermometer in the smoke stack and realized that the actual temp was around 300 :(. My model does not come with a dome thermometer and I am contemplating either installing one or adding an oven thermometer to get a better internal temperature. I believe the brisket will still turn out okay but I am sure I missed out on infusing it with the amount of smoke flavor that I would have preferred.

Have any of you seen this before, any additional tips/suggestions would be really appreciated. :)

What's most important is knowing what the temp is at grate level. The first thing I'd do is put a maverick pit probe on that grate. Also, since this cooker is new to you, I'd go buy a few tubes of those pillsbury bisquits and place them all over your grate evenly spaced out. Run your grill with the bisquits and they will tell you where your hotspots are so you can utilize the hotspots, or, avoid them depending on the circumstance.

Welcome to the forum Heizerweisson. Scooter has given you excellent advice, knowing your cooker is a very large part of success with these pits. There is a bit of a learning curve but with the help of the great folks on this forum that curve can be a shorter one. Just a suggestion, if you don't have any biscuits, take a few slices if bread and either half or fourth them and run the same test as with the biscuits. Good luck and good smoking.

Yep, I'd check the temp at grate level and compare it to the temp you have set. If there's a huge difference, then there could be a problem with your pit and a call to GMG would be in order.

Thank you all for your great advice, I will definitely give the biscuits a try. I am also considering installing a dome thermometer in addition to the internal thermometer. Again thank you all for your help. ;)
