Hey Guys,
I just purchased a GMG Daniel Boone and smoked by first brisket today. I set the temp at 225 but after about 4 hours the meat temp was already at 180. This seemed odd to be so I placed another thermometer in the smoke stack and realized that the actual temp was around 300
. My model does not come with a dome thermometer and I am contemplating either installing one or adding an oven thermometer to get a better internal temperature. I believe the brisket will still turn out okay but I am sure I missed out on infusing it with the amount of smoke flavor that I would have preferred.
Have any of you seen this before, any additional tips/suggestions would be really appreciated.
