Yesterday was baking time with my wood fire oven: onion pie - a harvest time classic that's made of yeast dough with a mixture of big sliced onions, eggs, bacon, salt and pepper.

Here's the recipe (in metric units):

dough:

30 g yeast
125 ml warm water
375 g fluor
1 pinch of sugar
60 g lard
1 pinch of salt

mix all ingredients and let the dough rest (at least 10 minutes)

spread:

4 big sliced onions
30 g butter
1 cup sour cream
2 eggs
125 g grated swiss cheese (at least)
chopped bacon to taste
salt 1-2 teaspoons
fresh ground black pepper to taste
optional:
1 pinch of nutmeg
1 pinch of caraway

roast the sliced onions in a pan until they are translucent; let them cool down a bit, then mix them with the sour cream, the whisked eggs and half of the grated cheese and the roasted chopped bacon; season with salt and pepper, optionally add a pinch of caraway and nutmeg

roll out the dough and put it into 1 or 2 buttered baking sheets, then spread the onion-mix over the dough, add the rest of the cheese

bake at about 360F for about 30 to 40 minutes or until the surface of the onion pie has a yellow-brown color
