Ortolan is a small bird that is considered a French delicacy. It is, however, illegal to eat or import them. The bird is captured and placed in a dark box, where it is fed millet. The darkness makes the bird eat continuously so, in essence, it is being force fed. It's then drowned in armagnac and roasted whole. Diners eat the ortolan, bones and all, with their head and face draped by a napkin or towel to absorb the maximum aroma and flavor of the bird or "to hide from God."
I would never eat one, but always found the ritual interesting.
