Porketta?

Anyone ever make a porketta? I have heard people talking about it and it seems to be an awesome think with seasoned up pork belly... I saw some really nice pics...thoughts?

Oh yea...I tried it. About two weeks ago. Never did post it because it did not turn out well. Its really a tough dish to cook. Does not work well on the smoker. Might try it again in the oven though. Don't waste 50 bucks worth of meat.You have a pork belly that needs to render out the fat at about 165 and a pork loin thats toast at 145-150. Good luck!
