Salsa Verde Chicken

In my quest to eat better this is what I came up with tonight.

I marinated some boneless chicken breasts in green salsa verde for a couple hours and then onto the MAK burning oak. These were smoked for one hour then finished off at 350 degrees.

Using smaller plates.. I sliced a breast and put it over a bed of fiesta rice, some sliced tomato and some verde for dipping..it was excellent and hit the spot!

I love salsa verde & that looks like it would be a great fresh tasting meal. Great inspiration Chili, you can bet I'll be trying some version of that soon.

With all the cooking (and mighty good looking cooking, I might add) you do, when do you have time to work? Or is this your work? Another knock-out meal, my friend!

Art I'm on vampire time bud :D
Plus I have no stove in my house at this time..so it's either smoked or cooked in the microwave. I have a burner on my gasser but it's just to cold out to stand over it hahahaha.
