for thanksgiving I smoked a 12 lb bone in shank ham, ready to cook.I smoked it at 250 to an I T of 155. it took 4hrs 10 min.It was a big hit with everyone. The wife just picked up two more on sale for 99 cents a lb.
I've done 4 hams on my YS640. You almost can't go wrong, I run mine at 275, ham face down in a pan with about a cup of water to IT of 155 then rest for a spell. I tend to go for the smoked but not cooked variety. If the ham is already cooked, you only need to go to 140.
