Stuffed Flank Steak on the 2 Star

I love watching Malcolm Reed How to BBQ Right videos (as well as BPS videos) to help me get away from the standard ribs, pulled pork, brisket, tri tip syndrome. I decided to follow his stuffed flank steak video:

First, I sauteed the veggies. I added onion, garlic, and red pepper to the mix:


Butterflied the flank steak (not as easy as Malcolm makes it look!):


All on the flank steak with a very, very light layer of cream cheese:


Rolled and tied:


Smoked for a while, then raised the temp. Here it is almost at 130-135°F:


Sliced and ready to plate:


All plated up with veggies and rice:


This was absolutely fantastic! Will do again for sure.
