One tip I got from Big Poppa was to dilute the sauce. I diluted to about 1/3 strength (just eyeballing it). Doesn't burn as easily. You don't get a goopy mess. I might not dilute quite so much next time, but we'll see.
ok here is a little tip that works great too..mix up 3 cups of apple juice and a pound of sugar..you can also use other juices but make sure its a clear one..whisk sugar into juice until dissolved over medium heat..about 5 min or so then transfer to a spray bottle and spritz ribs every 1/2 hour after you've ramped up the temp..this helps with moisture and also helps build bark.
