I was going to do some wings, but my wife picked up a smallish 8 lb whole brisket for me. Maybe I will do something with that instead.

Here ya go Deb, bypassing the starter and entree and going straight to dessert! :)

Chocolate stuffed banana smoked on a pellet cooker.

Ingredients: Banana, chocolate

Cut a slit down the banana without cutting all the way through, stuff with chocolate

Put them in the pit around 300 degrees for an hour

Chicken thighs with CT and Salt lick

Boneless skinless chicken thighs AND Carolina Treet

bagged for a rest in the fridge

Adding the "Salt lick clone" rub - 1-1-1/3-1/3 mix of
kosher salt
Black pepper
Granulated garlic
Cayenne pepper

I did them for a couple of hours on "smoke" then moved the temp to 250F until the IT was 170F

Prime Rib

Went for the Prime Rib this weekend:

Rubbed it down with Wee Willy's steak rub

Let it sit for few to warm up, put beef broth, onions, celery, and carrots in the drip pan for au jus

Onto the MAK for an hour on high (~475)

Prime Rib 2

Friend brought over some poppers to smoke up, I can't take credit for these. They were great stuffed with chicken red pepper sausage, cream cheese, and cheddar cheese.

After an hour on high smoked @250 until an IT of 130 (about 2.5 hours)

Let it rest for 20 minutes while we grilled asparagus sliced and served with a baked potato

Dessert

Did dessert to go along with the Prime rib, Big Poppas strawberry shortcake recipe

Buttered angel food cake with vanilla and melted butter

Warmed the strawberry topping up while toasting the bread (strawberries, brown sugar, and peach juice)

Carter Fabulous! I just love that strawberry shrotcake recipe...next season try it with peaches...died and gone to heaven
